CARRIBEAN
GRILLED TURKEY

INGREDIENTS
Turkey
- 1 whole turkey, cut into pieces
Marinade
- 4 green onions
- 1 bunch of cilantro, with stems
- 4 garlic cloves
- ½ cup (125 ml) ginger
- 1 white onion
- 3 jalapeno (or serrano) peppers
- 1 tbsp (15 ml) ground cinnamon
- 2 tsp (10 ml) ground cloves
- 2 tbsp (30 ml) salt
- 2 tsp (10 ml) pepper
- 2 limes (zest & juice)
- 2 tbsp (30 ml) dried thyme
- ⅓ cup (85 ml) honey
- 1 cup (250 ml) water
Dressing
- 3 tbsp (45 ml) plain Greek yogurt
- 1 tbsp (15 ml) light mayo
- 2 tbsp (30 ml) sugar-free honey mustard (Fitcook Foodz)
- 1 lime (zest & juice)
Coleslaw
- ¼ white cabbage, chopped
- ¼ red cabbage, chopped
- 2 carrots, grated
PREPARATION
1. In a blender, combine all the marinade ingredients and blend until smooth.
2. Place all the turkey pieces on a tray. Add the marinade, reserving at least 1 cup (250 ml). Let marinate for at least 30 minutes.
3. Using lit charcoal, a metal garbage can, and a grill, grill the marinated turkey pieces for about 15 to 20 minutes, depending on the grill’s intensity, turning regularly to ensure even cooking.
4. Towards the end of cooking, brush the turkey pieces with the remaining marinade.
5. In a large bowl, combine all the dressing ingredients. Season with salt and pepper and whisk. Add the coleslaw ingredients and mix well.
6. Serve the grilled turkey pieces with the coleslaw and the remaining marinade as an additional garnish.
*Be sure to use a stainless steel trash can or rotisserie, or a charcoal BBQ. You can also cook the turkey pieces in the oven or on the BBQ.
ALTERNATIVE COOKING METHOD #1
Whole Turkey
If you prefer to cook the whole turkey, it’s possible! You’ll need a rotisserie kit to slowly rotate the turkey inside the garbage can. Cook the turkey with the garbage can lid on until the internal temperature reaches 175°F, which will take about 1 hour and 15 minutes.
ALTERNATIVE COOKING METHOD #2
On the BBQ
For wings, drumsticks, and bone-in pieces, cook over medium heat for 30 minutes, turning regularly.
For other pieces, cook over high heat for 15 minutes, turning regularly.

Set up your trash can away from any vegetation and flammable objects. We want to cook a turkey, not start a forest fire!
